Well, fun reads aren't always what fine kitchen is about.Malulee Pinsuvana spent her time in DC and around big US air bases - her husband was for years the Thai air force attaché to the US. She was a plenty social lady and if you know anything about the DC social scene, you know that dinner parties are the underpinning of making real political things happen, maybe the most important lobbying effort short of lining politicos' pockets. Mdme. Pinsuvana had enough national pride to recognize that you don't get authentic anything from caterers and that it shows up just that way - tasty maybe, phony certainly. She also came to understand the dilemma facing hundreds of Thai diplomats, military and business sorts needing to do exactly as she was, or at minimum wanting to find a way to make home happen here.Her three volumes are written simultaneously in Thai and English with ingredient lists, recipe detail, and commentary. I had this book when I lived in Thailand and loved the recipes but I lost it in a move. This is actually better then the original since they made the binding spiral.

I got this for my mom and she is enjoying it. She reads Thai and a little English so this was perfect. However, with use, we've discovered some recipes definitely needed tweaking. This could be due to the different kitchen and qualify of ingredients I guess. Still, a very good reference for some hard to find Thai dishes.

Don't judge a book by its cover. This book was recommended to me by my friend who is originally from Thailand. It's got some amazing recipes in it. Though, the layout, type and the way it's put together reminds me of something out of the 70's.

Love this cookbook - my mom had it and when I moved I had to get myown copy. I love the Thai language and the English translation. I feel like I am cookign in a traditional Thai kitchen!! And theo color photos? LOVE IT.

This book makes sense of American history and the American present: race relations in this country and the very concept of "race" itself: how it developed in Virginia in the 17th and early 18th Centuries and how it has played out every since, not only here but in Europe and the rest of the world as well.The nitty-gritty is in Volume II, examining in detail how contracted servitude in the beginnings of the Virginia colony developed into chattel bondage. Then in the years after Bacon's Rebellion - in which European- and African-descended bond servants made a common cause against their planter masters - the planter class invented "whiteness," dividing the working population into slaves, the Africans, and "whites," the Europeans, an insidious piece of social engineering that created stratum of poor "whites" to control the black slave population, allying that stratum to the planters themselves and against their natural allies, the slaves.Volume I discusses British oppression and control in Ireland, a very similar system and mechanism but where both oppressor and oppressed were light-skinned Europeans. The latter part of Volume II treats the period right after the Civil War, and how the promise and possibilities embodied in breaking up the plantations and distributing the land to poor whites and former slaves ("forty acres and a mule") were dashed and a new regime of slavery without the name was put in place instead.

Allen proves his case. It took two volumes, and studying years of history beyond 17th-century Virginia, but it all works out. There is so much information it is hard to know what to say about it, but I feel there is understanding here that is vitally important to how we need to proceed today.

And why even now in the 21st century is it still a defining feature of our political and economic life? World War II and the post war Civil Rights movement pulled back the veil of American democracy to reveal to the world a sordid reality uncomfortably similar to the race supremacism practiced by Nazism and Japanese militarism. The resistance to Jim Crow posed a challenge to American historians to account for this defining feature of US society. White supremacism was enshrined in the 3/5 clause of the Constitution but even after a civil war and ten years of Reconstruction why was it resurrected in the form of Jim Crow? Theodore W Allen devoted the last 35 years of his life looking for answers. Among his numerous published and unpublished works, The Invention of the White Race (2vols) is his magnum opus. Volume II in particular, subtitled The Origin of Racial Oppression in Anglo America, is increasingly acknowledged as a ground breaking definitive work and the foundation for a much needed and truly radical history of America

From that moment on, each man's life became defined by the incident and its aftermath. Seamlessly weaving the event itself into the fabric of pro basketball's rocky pre-Magic/Bird/Jordan history of constantly relocating franchises, dismal television support and chronic violence, Feinstein tells a moving story of two men branded by a moment frozen in time, and how the incident changed the game it could well have destroyed. The narrative never gets mired in the fawning sycophantism of many sports books or the moral proselytizing of many others. Feinstein's research is sharp, and his time line jumps around effortlessly, like a good Quentin Tarantino film. "The Punch" was an excellent book. A little repetitious, as other reviewers have indicated, but otherwise the author took a difficult topic and did a fine job. A few points on the content. There is disagreement as to who threw the first punch- Kunnert or Washington. Kermit and Kareem say that Kunnert threw the first punch. Kunnert and referees Bob Rakel and Ed Middleton say that Kermit threw the first punch. Regardless of who threw the first punch, Washington was completely at fault for viciously attacking Tomjanovich, who was trying to break up the fight. If Washington was concerned about his safety, he should have put his hands up or moved elsewhere on the floor. Washington had a history of NBA fights, at least three of which caused his ejection . This includes one fight in practice in which he beat up one of his own teammates.In my opinion, Washington had a chip on his shoulder, and this chip was exacerbated after the fight and seemed to have a racial aspect. According to Washington, his lengthy suspension, loss in the civil suit filed against him and the Lakers, and his inability to find steady, long-term work were due to the fight and to racism on the part of the NBA, the public and the world in general. In 1995 he applied for the job of Athletic Director at American University. He was not chosen because he had no front office experience, but AU said he could come in as an Assistant AD and gain experience. Apparently this wasn’t good enough for Washington. He said he should be made the AD because of his name, and the experienced person should be under him as the Assistant AD. He had a lawyer send a letter to the NBA asking for $5 million dollars because he felt there was a conspiracy to besmirch his name. The NBA paid him nothing. earlier, when his agent was trying to get the best possible outcome on his suspension, Washington almost loused up his chances by talking about watermelon and fried chicken. He did many good things, his friends spoke well of him, and he had a difficult childhood, but he seemed to be a volcano waiting to erupt.

This book was recommended to me by a coworker who thought the lessons of the life-long impact of an incident, and how they dealt with it, on two different people would be applicable to some of my own life events. The recommendation was a solid one, and I appreciated learning about (I can't say more because I never knew about "the punch" until I read the book) "the punch" and how Tomjanovich and Washington dealt with not only the physical aftermath of the incident, but also the emotional and mental aftermath.The lesson is easy, if not predictable, but having it play out as you read it and realizing two men really experienced this helps to make the lesson more applicable.I was less impressed with the writing, which I felt needed a good editor. Major stories were repeated and quotes were often reused.

Feinstein is a fine writer but you wouldn't know it from this. This really should have been a retrospective article in Sports Illustrated, not a full-sized book. I often thought there were printing errors in my copy because I was reading similar passages over and over. But no, I suppose Feinstein needed to get a decent sized book so he did what he had to do.But at least I have a better overall view of Kermit Washington. He's a really great guy in many ways, very charitable and caring. The problem is he's handled just about everything relating to "the punch" poorly. He blames another player, tells Rudy how much he's suffered in a rare meeting, sues the NBA, etc. etc. I think it was John Lucas who advised him to take responsibility and move on, not say "I'm sorry, but...". Unfortunately, Washington hasn't taken this advice. I hope someday he does, because there's no winning when you look for excuses and scapegoats in something horrific you've done.

A BUNCH of info about professional basketball back in the '70's. I HIGHLY recommend

John Feinstein has again transported us to another world. He is the master at helping lead the reader somewhere he is not likely to go on his own. Feinstein is a master storyteller. This story of the effect one moment on the lives of two men is both fascinating and compelling.

Good book and very interesting reading. Some parts a little repetitive but overall a good book.

Now, I finally know the when, what, who, how and why of this story. All sports fan should read this book.

An interesting story that I knew nothing about before I read the book. It's amazing to me how one 5-second incident can affect lives forever. But I think the lesson of the book is that you don't HAVE to let it affect you forever. It is, of course, just the author's take based on his interviews, but it is sad that it seems Kermit Washington has never been able to move on from something that happened in 1977. Bitterness is a nasty poison.

You might wonder how a "real" Tarot deck could consist of just 53 cards. That's what I wondered too, until I got the deck and began using and studying it. The author "folded" the Majors and Minors together so that some cards do double-duty as either a Minor or Major or both, depending on how the reader wishes to interpret them or where the cards fall in a layout. In other words, you can give the Major/Minor cards as much weight in a reading as you like. But all the Minors (Clubs=Wands, Spades=Swords, Diamonds=Pentacles, Hearts=Cups) and all the 22 Majors are represented and accounted for (see the attached image), along with the very appropriate addition of a Joker card for the Fool. The Pages and Knights were blended into a single Jack, and this works quite nicely with combining the qualities of those two court cards into one. Each card has its suit symbol and either a number or court indication, but no words are used.The author based this Tarot on a traditional 52-card playing deck, and it could work for such purposes if you like. But it can also be used just as you would any other Tarot. It actually makes perfect sense that the author designed the deck this way, since one of the theories about the origins of contemporary Tarot is that it evolved from a standard deck of playing cards. So although this seems like a giant leap away from what many people have come to accept as the quintessential Tarot -- a deck of 78 cards, with 56 Minors (including four court cards and 22 Majors) -- this might be more of an "authentic" deck or perhaps a revisiting of Tarot's past. So don't let the uncommon construction of this deck put you off. It actually is a real Tarot -- just different from what you might expect.The cards themselves are phenomenally designed. The size (3.5 x 5 inches) is perfect, despite their larger-than-normal dimensions. Because there are fewer cards in the deck, the larger size of the cards is extremely easy to handle. I have very petite hands, but I can shuffle (riffle or under/over) with ease. The finish on the cards is magnificent. There's a heavy coating with a linen-like matte finish. This keeps the cards from showing fingerprints or dirt, making them easy to keep clean. The cards stick together a bit initially, perhaps because of the vertical "linen" lines in the finish. But the more you work with and shuffle them, the less this happens and the more they "soften" up and become "loose." This is my ideal size and finish for Tarot cards, so I couldn't be more pleased with them.The backs are gorgeous and reversible. The colors are cream, black, and white. There are no gilded edges with this deck, which I'm very happy about, since that tends to flake off and make a bit of a mess on hands and reading cloths. The edges do initially "shed" a bit from where they were cut at the print shop, but that diminishes with use. There are moderately wide borders on the cards, but some of the artwork intentionally bleeds into them, so I wouldn't suggest trimming the borders. They're perfect just as they are.The lavish illustrations are fresh, simple, and modern, but not precious or cloying, and the images have depth and inspire intuition. The colors are clear and distinct to each suit but create a well-coordinated family. Wands/Clubs: orange, green, and blue; Diamonds/Pentacles, soft yellow, burnt orange, violet/purple, green, and light brown; Hearts/Cups: red/pink, orange, brown, and green; Swords/Spades: blue, deep purple, violet, deep brown. As with any deck, there are some cards I’m greatly drawn to and others less so, but there aren’t any that totally turn me off. The artwork incorporates a combination of animals, plants, symbols, and ethnically ambiguous humans.It can take a little time and study to understand why the author chose certain Minors to mesh with particular Majors, but her choices mainly follow and represent traditional Tarot concepts and make sense to me. In general, they’re paired based on conventional meanings/interpretations, numerical value, or energy/suit. What's especially intriguing is that many of the cards, including the Jacks, are reversible (just like standard playing cards)!The box is incredibly sturdy and beautiful, and it's even embossed! It has an inner "cupped" holder to keep the cards secure and a ribbon to help pull them out. If you like to store your cards in a box or bag when they aren't in use, you definitely won't have to purchase anything additional.The LWB is actually a small, full-color booklet with key words for each card and a few simple layouts. There's not a lot of explanation of much else, which some readers might consider a good thing. I'd like to know more about the author's reasoning behind certain Minor/Major matches and her use of color and symbols, but they are nevertheless clear and consistent among the suits.This is a very easy deck to use and learn, and it's one I'd recommend for both beginners and seasoned Tarotists. Although beginners might not get to know the customary numbers for the Majors by using this deck, it really may not matter, since all the Majors are represented here in a very unique and compelling way. A bonus of this Tarot deck is that it will teach you how to read a regular playing-card deck should you ever need or want to.It's tough to come up with original approaches to Tarot, and most contemporary decks either stick with the traditional 78 cards or even add a few extra ones. This is the first time I've come across a full deck that takes a more "condensed" approach, but I must say that I'm impressed.

While the cards are much larger than I thought they would be, I'm still happy. I have very long fingers so bigger cards are no issue for me. :)

The Illuminated Tarot, is an oversized deck of 53 fully illustrated and boldly colored cards resembling a standard playing card deck. The four suits have playing card indices (Spades, Hearts, Clubs, and Diamonds) with the illustration influenced by the Rider-Waite-Smith Tarot suits (Wands, Cups, Swords, and Pentacles). But what makes this deck truly unique is that some of the cards are associated with a Major Arcana (not Minor Arcana) card. I think of these cards as having been "promoted" -- if you are of a mystical mindset, you may think of them as being "lifted to a higher vibration."Examples:* The Ace of Clubs depicts a lion holding a RWS-like Ace of Wands. It has been promoted to the Major Arcana card Strength.* The Eight of Hearts has a large, reversible red face of a moon, which is suggestive of the RWS card Eight of Cups and its figure that is walking away under the light of the moon. This card has been promoted to The Moon.* The Two of Spades is a closeup of an upside down and blindfolded face, suggesting the visual element of the "hoodwinked maiden" in a RWS deck. This card has been promoted to The Hanged Man.* The Nine of Diamonds, with its abstract pond and garden, has been promoted to The Hermit. This is similar to the solitary garden of the woman depicted in a standard RWS Nine of Pentacles.It is clear that the author-illustrator Caitlin Keegan has a deep understanding of the Major and Minor Arcana. She made excellent choices throughout her deck as to which cards to promote to the Major Arcana. I would not be surprised if her system becomes adopted by folks who read with playing cards. (Yes, it's that good.)The size and presentation of the deck, with its beautiful gold embossed clamshell box and its full-color companion booklet, suggests that is a art deck. But a deck this well-designed and executed begs to be used! I look forward to working with The Illuminated Tarot and it will definitely be on my Top Ten Decks for 2017.

Amy Webb is in my circle of acquaintances among the various futurists that populate LinkedIn, so when she announced her book The Signals Are Talking, I immediately added it to my Read Now list.Ordinarily, I can go through books like these in a few hours, but Ms. Web's book, even though relatively short, took me a few weeks. Why? Because every chapter required reading in small bites, thinking through the implications, jotting down notes and occasionally arguments, and in general studying it.What Amy Webb has written is no less than a primer on how to be a futurist. She lays down a coherent methodology for identifying the unusual suspects that are often at the forefront of technological and (perhaps less forcefully social) innovation, mapping out the signals as parts of broader trends, establishing time lines and viability, creating scenarios that tells the story of the impacts of this innovation, testing those scenarios with stakeholders and then building a strategy for organizations to best utilize this research to position themselves in the market.This book should be a must read for organizational strategists, investors, technologists, politicians, data scientists and science fiction authors, really, anyone whose business or area of concern is dealing with the deluge of change around us. It also helps to differentiate between what is "shiny", which often makes for great click bait but never quite materializes, and what are the deeper trends that often occur over decades, and are usually the result of multiple converging and competing factors.I would like to see a followup to The Signals Are Talking that digs more in depth into the realm of predictive analytics and how the two complement, and occasionally compete, with one another. Nonetheless I cannot recommend the Signals Are Talking high enough.

I was hoping this book would either teach me how to think like a futurist or explain all of Webb's insightful predictions about the future. Instead, it does a poor job of #1 and barely attempts #2. Aside from some interesting predictions about drones in the beginning and a few tidbits about AR in the last chapter, Webb spends most of the book rehashing how various organizations/people were able to predict the future successfully. Nintendo and Uber are among those examples. Hindsight is 20/20 right? I'm sure it wasn't super challenging to cherrypick the successful organizations and backwards-engineer them as great examples of past-futurists.Webb also does this backwards engineering with her own predictions, recounting how she predicted the trend in voice-based digital assistants. I'm more interested in her actual predictions of the actual future though. I already know voice-based digital assistants are big now - I'd rather she went out on a limb, took a risk, and told me what she thinks will happen in 2025 and why.Regarding the teaching section, there are some infographics and broad questions included, but it feels like reading a fluff online article or infographic. Pretty to look at but generally not specifically actionable. Who is the audience for this book? CEOs trying to predict the future themselves? (Doubtful, they would just hire her) Laypeople who want to predict the future? (You're not going to come away feeling like you have an action plan, only an idea of what Webb did in the past) Laypeople who want to read some interesting predictions and not a history of Uber? (Very light on the actual predictions, but they were the most interesting part).I did love Webb's memoir book, Data: A Love Story, and I think she can write well at a technical level if the ideas and overall topic are better thought-out and organized. If she writes another book along those lines, perhaps I'll give her writing another try.

Every job I've ever had has asked me to forecast the future. I've done projections for new projects, new markets, new initiatives. Forecasts beyond the next few months are usually BS.Except in some cases when they aren't. Many people look at those who "guessed right" and either think they are extremely brilliant - or extremely lucky.This book helps disprove both of those assumptions. This book gives clear direction for what to look for, how to analyze and review those data points, and how to string together those signals to theorize what may be coming next. Here in early 2017, we all need to be able to analyze what's on the fringe and see how it connects to make tomorrow's mainstream - sometimes only a few weeks away, and sometimes a decade.Highly recommend the book, and looking forward to sharing it.

I assigned Signals to my online digital media entrepreneurship class — seniors and graduate students at the Cronkite School of Journalism at Arizona State University — a few weeks ago because I wanted the students to try future forecasting. I had the students articulate the signals that MTV/Viacom missed in 2005-7 that cost the company its position as the arbiter of what is in/hip/cool for youth culture. Separately, the students each had to make a prediction about new technology coming our way in 5+ years and articulate all of the signals that are talking to them now that are informing those predictions. The final assignment is for each distributed group to come up with a digital media business idea by using the methodologies in the book. I can’t wait to see what they come up with. The students enjoyed the book because it opened up a new way of thinking. The debates in the discussion boards over which of their classmates’ predictions were plausible and which were shiny objects were passionate and they drew upon the lessons in the book. Several students said they could not wait to pass the book on to friends and family. It is no small feat to get an online class super engaged in a complicated subject. I look forward to incorporating the book into my on-the-ground innovation course.

We have lots of step 1 reading books. This is the worst. It has no story. Each page is just Arlo hearing different sounds. Do not recommend.

I was hoping to get a hardback version of The Maine Woods. Although this edition included photographs, I didn't anticipate that would be a problem. I was very disappointed when I received the book to discover that it only contained short excerpts of Thoreau's full text. However, rereading the description on Amazon, this fact is clearly stated and I just missed it when I made the purchase. So I can't really be critical, and I have to concede that the book is very nicely put together and the photographs are excellent.

Purchased this book as a gift for my husband. He really like it and its a great coffee table book.

This is the best combination of verse and photography I have seen which features the writings of Henry David Thoreau.

With Maine roots and now that we are retired, spending our summers in the Boothbay Harbor area, my wife had indicated an interest in this book for her birthday. While her birthday has yet to arrive and thus she hasn't had a chance to see it, I have and recommend it highly. The book cover sets the tone - great ambiance and superb photography.

It was approximately 150 years ago when Henry Thoreau wrote The Maine Woods (Penguin Nature Library). Thoreau was one of America's earliest naturalists and environmentalists. He traveled the world through books, but in terms of physical travel, Maine was about as far away as he ever got from his home near Concord, Massachusetts. His works are deeply meditative on the importance of the natural world in our lives.Dan Tobyne acquired an obsession with Thoreau - a beautiful obsession - and decided to follow the footsteps of Thoreau in Maine during his three visits there. It is a large part of central Maine; and Tobyne provides a suitable map which traces Thoreau's travels. This book consists, in general, of one large photograph per page, usually of the natural world, coupled with excerpts from Thoreau's book. And that is the true strength of Tobyne's book; he seems to have an uncanny knack of taking precisely the right picture to accompany Thoreau's words. It is a marvel... and no doubt, many photos hit the cutting room floor, or, as we do nowadays, fell victim to the delete button. Perhaps 10% of the pictures involve man-made structures, usually old ones, including one of an ancient sawmill. The author obviously traveled to Maine on numerous occasions to take these pictures, so that you can enjoy Maine in its various seasons, including when it is snow-covered. And he only mentions the black flies once!Normally I appreciate more details about the photographer, and the conditions under which he worked, including when the photos were taken. It would also have been nice if the precise location was given. No doubt a decision was made that all this would be "unnecessary clutter," and the focus of the book should be the natural beauty of Maine coupled to Thoreau's words, and I can accept that, since the work is a superlative synthesis of those two elements. Watery, woodsy, overcast Maine is presented in all its glory.As a final note, I received this book as a present from a friend who pushed me (finally!) to read Walden. Many thanks for the push, and the inspiration to read even more of Thoreau. It might even develop into my own obsession. A solid 5-stars for Tobyne's own.

In the 1960s, when I first discovered the works of writer Irving Wallace, I was thoroughly entranced. But I also felt that he was one of those best-selling novelists who could tell a good story but would never be among the great authors, the literary giants. Oh, how wrong I was. Flash to over fifty years later, and I have re-read two of his works, The Word and The Man. I found The Word to be a painstakingly researched, very topical novel even after having been written so long ago. But The Man? It is 739 pages of electricity, a tale that speaks to us today as powerfully as it spoke to its 1960s audience. Obviously, it is somewhat dated: women are referred to as girls, everyone smokes like chimneys in all the hallowed halls, including the White House, and the “n” word is spat out liberally, as well as many other racial epithets that are offensive today and should have been offensive back then. Fine literature, however, transcends the era in which it was written and speaks to its audience in any decade. The Man tells the story of an African American senator—a rarity in its time—who, because of a series of deaths and the laws of our nation, becomes President of the United States. And, of course, there are multitudes who don’t think he is capable of the task simply because of his skin color. We see those attitudes rearing their ugly heads daily, even though we are now in the 21st century, and the political machinations seem timely and believable, based on what we read in the news about our current American president. This is a novel that flies by, is totally engrossing, and beautifully constructed. Yes, by our current standards, some of the descriptions go on and on, but unlike those passages in The Word, where I admit I skimmed a bit, these all seem perfectly fashioned to build whatever the mood or tension is needed. The Man is magnificent, and it deserves two things: to be read by modern audiences and to be filmed by a dynamic filmmaker who can give it the treatment it deserves.

This is an insider's view of an acclaimed New York City restaurant. The author spent more than a year as a line cook in Mario Batali's restaurant Babbo. He goes in as a semi-successful home cook with no restaurant experience and emerges as a veteran of nearly every station--prep cook, grill, pasta, etc. He quickly sees the complexity within a restaurant environment and begins to understand how food is transformed from raw ingredients and delivered onto a plate. He then decides he wants to know more and makes several trips to Italy to learn pasta and butchering techniques from old school masters.The book is easy to read and thoroughly entertaining. The second half in Italy can get just slightly tedious, (which prevents a perfect score), but the last chapter is a great payoff and ending to the book. A must read for fans of food and those contemplating a life as a chef.

Like a master chef's kitchen, Bill Buford's journal of his food journey is rich and sensual with flavor and aromas.An established magazine editor and successful author Bill Buford has always been an amateur cook, but in his late forties he decides that living in an ephemeral and materialistic world of slight success, fashion, and fame is not enough for him. He wants to understand the soul of things, and ultimately that means understanding where the food he eats comes from and how it is best prepared, and while at first that means writing a magazine article on Mario Batali, the search ultimately takes him to Italy where he learns to make fresh pasta, butcher pigs and cows, and while falling in love with tradition and heritage also come to see poignantly how they can change and disappear as well.The book swings back and forth between two places. First there's Buford's hometown of New York City, where Mario Batali runs the finest Italian restaurant in America and where Bill Buford has situated himself as a kitchen slave. Then there are the hills of northern Italy where Batali learned the power and allure of true and traditional Italian cooking, and where Buford traveled many times in the search for the essence of food, and the origin of things.Batali's Michelin three-star kitchen is a source of endless conflict, and Buford describes it brilliantly as though the kitchen staff were a ragtag motley platoon of misfits and maniacs caught at war. The hills of Italy, on the other hand, are an endless source of fascination and wonder for Buford, and it is in these sections -- powered by Buford's love -- that are slow and at times ponderous to read.Like a brilliantly prepared Italian dish, "Heat" is full of subtle and sublime flavor, created by the author's wonderful and precise use of detail and food nouns, and while this like good food can activate all our senses and stimulate intoxicating memories it can also be at times too rich and thus at times a bit revolting. (Was an entire chapter on polenta really necessary?)And this book can only be truly appreciated by the true gourmand, as it is so densely packed with culinary terminology and thinking.While Buford's preparation and execution can be a bit much, I did come away learning a lot from this book, lessons that will stay with me for the rest of my life, as I deepen my culinary practice: How simplicity can take a lifetime to master, how a food tastes of its ingredients (case in point is how pasta is defined by the quality of its egg) and of the devotion of its practitioners (it seems that only petite Italian women with very small hands with nothing to do all day but make tortellini can make true tortellini), how meat is defined not by the breed of the animal but by the breeding of the animal (feed a cow real grass, and let it grow strong and big by letting it till the fields and roam the pastures, and you'll have excellent beef), and how food can unite families and define cultures like nothing else (Italians believe they invented food).And so unfortunately with the advent of modernization, technology, and globalization, food culture is slowly being lost to us. Here is an Italian master's poetic and poignant description of what we have lost:"In the seventies, the chianine were good. They tasted of the hillsides and clean air. They ate grass and had acres to roam in, and, because they were work animals, they were exercised constantly. The meat was firm and pure. It might take two weeks before it softened up. Today, the chianine do not have hillsides to roam in, because you use a tractor to work vines, not an animal. And instead of grass, they eat cereals, grains, and protein pellets: mush. They eat mush. They taste of mush. And after the animal is slaughtered, the meat behaves like mush: it disintegrates in days. A chianina is a thing to flee from!"
