Fall into Cooking Featured Recipe from David Thompson's Thai Street Food: Fried Chicken and Squid Rice Noodles When I first ate these krua gai noodles I wasn’t convinced. I had so many other noodle dishes that enticed and pleased, some of which are also in Thai Street Food. Now I am addicted to the winning simplicity of them. In Bangkok’s Chinatown there are many versions, some with prawns, others use pork but mostly squid and chicken is the order of the day. As you walk down the narrow alleys of this quarter, away from the busy main streets, it’s like stepping back in time. It’s still bustling, though, with the air filled with spices, chatter and the scraping clatter of smoking woks. To make the best of this recipe you’ll need to season your wok. It imparts a smoky, slightly metallic tang to the dish: a lingering sign of success is the breath of the wok. All you need to do is prime the wok by burning it, scorching it over a flame and turning it to ensure that every part is charred. Wash out the wok then return it to the heat and it's ready. --David Thompson Serves 2 Ingredients 3 oz chicken breast fillet, with or without skin as preferred a drizzle of light soy sauce, plus 2 tablespoons extra 1 garlic clove, peeled pinch of salt 3 tablespoons vegetable oil 3 oz cured squid (plaa meuk chae) or fresh squid or cuttlefish, scored and finely sliced ground white pepper 1–2 teaspoons preserved Chinese vegetable (dtang chai), rinsed and drained 2 heaped tablespoons chopped spring (green) onions 2 heaped tablespoons chopped Asian celery (optional) 8 oz fresh wide rice noodles 1–2 teaspoons dark soy sauce, to taste good pinch of white sugar 2 eggs, ideally duck eggs 1 cup loosely packed, very coarsely cut Chinese lettuce pinch of deep-fried garlic 1–2 tablespoons chopped coriander sauce Siracha, to serve Slice the chicken and briefly marinate it in a drizzle of light soy sauce. Crush the garlic to a somewhat coarse paste with the salt—either by pounding it using a pestle and mortar or finely chopping it with a knife. Heat the wok then add 2 generous tablespoons of the oil. Add the chicken and the cured squid and lightly stir-fry until golden and almost cooked. Stir in the garlic paste, a pinch of white pepper, the preserved Chinese vegetable and 1 tablespoon each of the spring onions and Asian celery (if using). By now most of the oil should have been absorbed; drain off any excess. Pull apart the rice noodle strands and add to the wok, spreading them over the contents of the wok and onto the surface of the wok itself. Leave undisturbed for a moment--up to 30 seconds--then gently begin to stir and shuffle the noodles and the wok. It is important not to break the noodle strands while doing this. Drizzle the noodles with the extra 2 tablespoons of light soy sauce, the dark soy sauce and the sugar. Sprinkle them with most of the remaining Asian celery and spring onions, along with a good pinch of white pepper. Turn up the heat slightly to caramelize the noodles, stirring occasionally and carefully. After a minute or two, push the noodles to one side of the wok and add the remaining tablespoon of oil. Turn up the heat, crack in the eggs and fry until they are just beginning to set and the edges of the whites are beginning to brown. Lightly break up the eggs, then gently stir and fold in the noodles, simmering them for a few minutes so that they caramelize and char slightly. Finish with the Chinese lettuce and the remaining Asian celery. Serve the noodles sprinkled with the deep-fried garlic, the remaining spring onions, the coriander and a pinch of white pepper. Accompany with a bowl of sauce Siracha.

Fantastic book, more of a coffee table book than recipe or cookbook, but a treasure. I am a chef that has trained in a Thai kitchen and this book takes me back to the days in that kitchen. The pictures and stories in this book are worth the price alone. I have always wanted to travel this region, and just bounce all over working and learning from multiple kitchens. Aftet buying this book and reading it from cover to cover that dream is a bucket list item now. The recipes are tricky if you do not have a great Asian market near by, but just a fantastic book. Anyone that loves Thai food should own this book. Again, the book is a little bigger than most cookbooks and may not fit on a book shelf, but a great coffee table book.

This book is great. You may not be able to find some of the ingredients but come on, it’s a Thai street food book. Some popular dishes were missing but had a few of my favorites. It’s also massive, so it’s a great coffee table book.

I saw this book at a store in Thailand and knew I liked it so I had to get it when I got home. It’s big and heavy and has beautiful pictures of the food and the street life in Thailand. Pretty expensive but worth the money.

This book shows you the most complete Thai street food available with a good indication of all ingredients per dish needed and the step by step instructions on how to make it. It also shows many elaborate pictures of all various places where street food comes from and the scenes how they are consumed. Most impressive, are the stories that make Thai street food the complete bible on this subject is the descriptions of where dishes come from on the history behind it. In the back of the book are the thumbnails of the pictures and the description where they are made, this might give you inspiration which markets to go when in Thailand.Pictures are of fantastic quality and so are the recipes. The other book by David Thompson (known to me as being the English speaking guru on Thai food and a capable man who know to prepare Thai food better than many Thai themselves) is a complete bible on almost all recipes from Thailand, however being more technical and being more a recipe book. This is besides a very good recipe book also a fantastic coffee table book to show off. Well done!

the recipes are great. when you can actually find the ingredients, its really like eating streetfood in Thailand again. requires a little bit of imagination when you can't source the ingredients, but the book does a good job of offering up alternatives.

David Thompson, the author of "Thai Food", the English-language "bible" of Thai cooking, has done it again!I lived in Thailand for 3 years, and found the street food to be wonderful. You will find delicious morsels for sale on every street corner in Thailand - many Thais graze all day while running around getting their shopping and work done. This is the first cookbook I have ever found, even in Thailand, that captures all these delicious recipes in one place. The recipes are very authentic and approachable for the home cook. This is Thai "comfort food" at it's best. And mixed in with the excellent recipes are tons of outstanding photos that really capture the essence of the Thai street scene. As a photography book it could stand alone, even if you never cooked anything from it. But that would be a shame - I tried a couple of my street favorites this week, and the recipes were EXACTLY like I remember the taste.An outstanding book - but I didn't expect anything less from David Thompson. If you don't have his other book, "Thai Food", you should consider adding that to your collection also. It's full of recipes that you rarely find in cookbooks outside Thailand (as well as all the old favorites), and some of my very favorites came from that book. Buy them together and you will never need another book on Thai cooking!

This is an exceptional book. As a professional cinematographer, I realize that the tools and the tricks of the trade are changing faster than I can keep up with on my own. So I rely on Taz and his endless research to keep me up to date on the newest apps. This book is wonderfully broad - some of the tools that I found most helpful might not be of interest to casual filmmakers, and some of the entry level apps appeal primarily to non-professionals, but that just means there's something here for everyone.So if you've ever picked up an iphone and snapped some video, or wished there were an ipad app to make your cinematography just a little bit sweeter, this is the book for you.

and update.. IT IS THE NEW WORLD IN FILMAKING. go for it. no doubt if your have any apple portable products and are interested in film school / amateur or professional Filmaking. it has not only a clue, but even too much of the real apps We use on a daily basis for every filming process.

I decided to get an iPad and to try my hand at light filmmaking, something I used to be interested in before life pushed me in other directions. Recently, I have been doing wedding video with my dslr and wanted a solution to quickly make short same day edits of the ceremony to wow and surprise my clients. Not only did this book help me figure that out. It also got me excited about indie filmmaking again! Thank you so much.

I found this book to be helpful in planning our visit to Crete but it has its limitations. Absence of a map with locations numbered to match the list is one. Such a map would help to focus the reader on where they may wish to travel (in Chania city or elsewhere in the province). The second is the spelling of places, some of which do not align with Google searches. Example #28 Walk Around the Lively Street of Daliani. On Google maps this street is Chatzimichali Ntaliani. There are a number of similar examples; alternative spellings would be helpful to avoid confusion.There are a number of clever ideas that will help make the visit feel a bit less touristy.

"This book will not tell you exact addresses or store hours"... says the back of the book. Believe it. It also won't give you the complete name of establishment, or how to find it.This book has no photos. Half of the book is general travel tips (what to pack).As a previous review suggested: a MAP would be a welcome addition to this guide. Seeing as how some of the names of places mentioned in the book are a mystery to Google (thank you multiple ways of spelling the same Greek word) and there is very VERY vague reference on how to find them there are a few that I have no idea if they still exist or that they just go by a different name.

For my first visit to Crete to see the homeland of my grandparents, I was armed with many different books, maps and brochures. However, this book wins the prize as the easiest to use to pick out the things you would like to do and her reviews were spot on. This helps guide you through some spots that not so many tourists visit and that allow you to enjoy the culture of the island. I agree that sometimes it took Google to figure out where the destination was but again, this is a winner.

A clear picture of places to visit that I did not find boring. Show the research that was done. Great and interesting book.Job well done.
